PANCAKES FOR THE PEOPLE

I have had a lot of different ideas for this. One idea was to have a brick and mortar structure named either Mike Pancakes House or The Alamo Diner. I decided against Alamo Diner as the name would be too close to that of an existing restaurant and could lead to confusion.

My next thought after this was a place downtown here in my hometown that would serve well. But, would also take a lot of work to build up. This was actually where I had the first idea of a downtown diner that would serve food and bring more people to the downtown area.

Again, a lot of work. And, while it does it have the added bonus of an apartment on the second floor to reside in, this site would not be in the cards either. So, another idea was to get a double decker bus and build the kitchen into the lower section with dining in the upper section. This would allow for mobility and freedom while serving delicious pancakes to all my friends.

While this idea was widely accepted, it would take a lot of money to bring into full realization. So, I had the idea of perhaps starting small and building. Maybe get a small trailer and set up at local events. Once that started becoming profitable I could build up to the bus or even the brick and mortar someday. Who knows what the future will hold. For now I keep dreaming and cooking delicious pancakes for my family.
